Stinging Nettle Soup to boost the immune system before winter!

We have had the most wonderful golden October here in Geneva. In the last few weeks we have been lucky enough to have an Indian summer and with it, a new blossoming of nettles.
It is only this year, that I tasted stinging nettle soup. I was looking for a local (and healthy) eating experience whilst on a trip to Sarajevo and I found a restaurant called Zara iz Duvara. We had a really great evening, not only because of the fabulous food but also because of the owner who was charismatic and charming. Her passion for fresh local food, really shines through. Anyway, nettles are a free Superfood containing fibre, calcium, magnesium, vitamins A and B6 as well as protein. In addition, there are many purported health benefits; it is a anti-histamine, helps maintain blood sugar levels, boosts the immune system, helps with detoxification. However, the main thing is that it tastes great in soup, is good as a vegetable with your morning omelette or as a tea!
Look for nettle patches which are not close to fields or golf courses where they will spray herbicides and pesticides. Only take the top few leaves.
