Makes approx. 20 crackers, Prep time 20 mins- including waiting time, Cooking time approx. 1hour
INGREDIENTS
½ cup chia seeds or linseeds- ground

Keto, Low-carb seed crackers
½ cup pumpkin seeds
½ cup sesame seeds
½ cup sunflower seeds
1 cup water
1 large clove of garlic- finely chopped
1 tbsp of Rosemary, finely chopped and other herbs per taste
¼ teaspoon of salt or to taste
Can use other seeds in place of sesame, pumpkin or sunflower e.g. poppy seeds.
DIRECTIONS
Grind the chia or linseeds (Not obligatory but this ensures better absorption by your body) and mix together with all the other ingredients. Leave to stand for approx. 10 mins until firm consistency.
Spread the mixture onto baking paper or a silicon mat and spread out using a large spoon until max ¼ inch / ½ cm.
Mark into squares with a the blunt side of the knife
Bake at a low temperature 120c, gas mark ½ until crispy. If too thick and not crispy underneath, may have to turn over and bake for a further time. Once cooled, store in an airtight container. Enjoy with organic cheese or Sunflower seed pate.
N.B Adding rosemary and cooking at low temperatures limits the formation of acrylamide according to a study by the “>Technical University of Denmark.
