Grate Cauliflower in food processor
Add to a large pan with a little bit of water and cook to soften for 5 minutes
Ensure water has boiled off or drain and make a space in the middle
Add 2 tbsps coconut, ghee or olive oil and then add an egg (optional) Cook egg, break up and mix into cauliflower rice
Add spring onions, peas or any vegetables of your choice. Option to add dessicated coconut for texture. Fry for 5 mins then add Tamari (gluten-free) Soy sauce
Add in some nuts, cooked prawns or chicken etc for a complete meal. Otherwise, serve with your favourite stir fry vegetables or meat.
The grated cauli can also be a tasty gluten-free alternative for cous-cous in your taboulé.
