Makes approx 50-70. crackers, Prep time 20 mins- including waiting time, Cooking time approx. 1-1.5 hours
INGREDIENTS
1 cup linseeds- ground
1 cup sunflower seeds
1 cup water
Zest – finely chopped and juice of a lemon
2 tbsp of Rosemary, finely chopped and other herbs per taste
1/2 teaspoon of salt or to taste
Can use other seeds in place of sesame, pumpkin or sunflower e.g. poppy seeds.
DIRECTIONS
Preheat the oven to 120C
Grind the linseeds and Sunflower seeds – (Not obligatory but this ensures better absorption by your body. I use a small coffee grinder which takes 1/2 cup)
Finely chop the lemon zest and rosemary -chopping releases the aromas, making it a real sensory experience whilst improving your memory- see health hack below*
Mix together with all the other ingredients.
Leave to stand for approx. 10 mins until firm consistency.
Divide the mixture into 2 and spread half the mixture at a time onto baking paper or a silicon mat. Flatten out using a large spoon. Alternatively cover with silicon mat and roll until max ¼ inch / 3mm.
Mark into squares with a the blunt side of the knife
Bake at a low temperature 120c, gas mark ½ until crispy. 1-1.5 hrs
To ensure crispy turn over after 30mins. Once cooled, store in an airtight container. Enjoy with organic cheese, butter or Sunflower seed pate.
