Raw MacSlaw

For optimal health, it is important that a good % of your daily diet should be raw vegetables with a small portion of seasonal local fruit. I make a raw MacSlaw which is basically coleslaw with olive oil and vinegar or lemon juice. It is fabulous as a side dish for eggs, cheese and even curries. Choose your favourite vegetables and grate them to the size you prefer. Beetroot is my favourite base. Beetroot contains nitric oxide which is excellent for maintaining stable blood pressure and improving mood. It also contains many vitamins including B9 (folates), Vitamin C and minerals such as manganese, potassium, copper and many more.

 

 

 

 

Carrots are also another of my favourite,  high in  Vitamin A, plus B6, C and K and again so much more. However, whatever veg you choose; cabbage, broccoli, cauliflower etc, you are going to get a major hit of vitamins, minerals, antioxidants etc. Also when veg it is in it’s raw state, it is a pre-biotic which feeds your helpful gut bacteria.

Add your favourite olive oil, apple cider vinegar etc which are digestive enzymes. The oil also helps your body to absorb vitamins A,D, E & K. Or what about a squeeze of lemon to give it that zesty hit. Finally, add some pumpkin seeds, walnuts etc for protein and to make it even more tasty and nutritious and to turn it into a complete meal.

You can even add a portion of pickled (fermented) veg for your daily pre-biotic boost to re-populate your gut bacteria. Or what about adding some pomegranate seeds, especially when they are in season in the winter. Pomegranates are a known superfood and give your energy cells (mitochondria) an amazing boost!
