Ingredients

  • Cauliflower
  • A little water
  • 2 tbsp coconut oil ghee or olive oil
  • 1 egg optional
  • Spring onions peas or vegetables of your choice

  • Nuts cooked prawns or chicken, optional

Method

  1. Grate the cauliflower in a food processor.
  2. Add to a large pan with a little water and cook for 5 minutes to soften.
  3. Let the water boil off, or drain, then make a space in the middle of the pan.
  4. Add the oil or ghee and, if using, the egg. Cook the egg, break it up and mix through the cauliflower.
  5. Add spring onions, peas or your chosen vegetables. Add desiccated coconut for texture if you like. Fry for 5 minutes, then add tamari.
  6. Add nuts, cooked prawns or chicken for a complete meal, or serve with your favourite stir-fry.

Notes

The grated cauliflower also makes a tasty gluten-free alternative to couscous in tabbouleh.
