I was hungry this morning and wanted something really tasty so I made a quick omelette 🙂
4 Bio eggs- beaten with salt and pepper
Few slices of goat’s cheese
Salt and white pepper to taste
Duck fat for frying, can also use lard, beef fat, butter, coconut oil or olive oil
Fry onions in duck fat on a low temperature for approx 10 mins with a lid on. Add white pepper and salt. Saute for a couple of minutes before adding the eggs. Put the cheese on top and put the lid back. Cook for a further couple of mins. Remove the lid and cook under the grill for a few minutes until the cheese is bubbling.
