I was hungry this morning and wanted something really tasty so I made a quick omelette 🙂
4 Bio eggs- beaten with salt and pepper
Medium sweet potato- sliced
Few slices of goat’s cheese
1/2 teaspoon turmeric* with large pinch of black pepper
Duck fat for frying, can also use lard, butter, coconut oil or olive oil
Fry sweet potatoes in duck fat on a low temperature for approx 10 mins with a lid on. Add onions, black pepper and salt. Saute for a couple of minutes before adding the eggs. Put the cheese on top and put the lid back. Cook for a further 10 mins. Remove the lid and cook under the grill for a few minutes until the cheese is bubbling.
*P.S. the turmeric does not add much taste but with the addition of black pepper, it has been proven to boost your immune system
